Raining... Comfort Food... Giveaway...

Loving the RAIN and cold weather... and being able to turn the oven on... last night was a chicken enchilada casserole (too lazy to roll each enchilada) night... starting with boiling a whole chicken (part of it will be used for a future pots of Chicken Noodle Soup... that's another rainy day item)...

I use a combination of red and green salsa for my sauce... instead "enchilada sauce"... Salsa sauce ready...
Mild cheddar cheese grated with sliced green onions and a little Lawry garlic salt and pepper...
Corn tortillas gently fried...
Son helps dip tortilla in the salsa sauce... and place in the pyrex dish (note bandage... the finger accident... thank goodness it is still attached... kids!)... ok moving on...
Ooops... you can tell... I'm not a "foodie"... I forgot to show the layering process... tortillas... cheese, green onion, shredded chicken... tortillas... cheese, green onion, shredded chicken, tortillas and then topped with cheese alone...
Baked at 350 degrees for 20 minutes... and as you can see... it was a HIT!
Hey... the ovens still warm... how about some cookies for dessert... no recipe for these... dairy section cookie squares... ready to bake... YUM!
So that was last night's events... yesterday's event involved a bit of painting... remember this photo via Cris, Artist in Oregon... voted the winner of my bicycle collection giveaway...
Here is the painting... and NOW the Bicycle Collection is complete! The winners of this giveaway will be getting a delivery soon!

Now, this not only looks delicious, it looks easy, too. That is my kind of cooking.

I am so annoyed at myself for not sending you a picture. I don't know how I possibly think I could win, when I haven't send a picture. Duh is me. ;-)

First off I LOVE THAT BICYCLE PAINTING. You did a fabulous job on it. I think it really finishes off your card set. I can't wait to get the cards. :))
The dinner looked great too. I will have to give it a try. and congrats to the next winner for a painting. It looks adorable.
Glad your Son's finger is ok. I know from experience how scary it is to have that happen to a hand or finger.
