Raining... Comfort Food... Giveaway...

Loving the RAIN and cold weather... and being able to turn the oven on... last night was a chicken enchilada casserole (too lazy to roll each enchilada) night... starting with boiling a whole chicken (part of it will be used for a future pots of Chicken Noodle Soup... that's another rainy day item)...

I use a combination of red and green salsa for my sauce... instead "enchilada sauce"... Salsa sauce ready...
Mild cheddar cheese grated with sliced green onions and a little Lawry garlic salt and pepper...
Corn tortillas gently fried...
Son helps dip tortilla in the salsa sauce... and place in the pyrex dish (note bandage... the finger accident... thank goodness it is still attached... kids!)... ok moving on...
Ooops... you can tell... I'm not a "foodie"... I forgot to show the layering process... tortillas... cheese, green onion, shredded chicken... tortillas... cheese, green onion, shredded chicken, tortillas and then topped with cheese alone...
Baked at 350 degrees for 20 minutes... and as you can see... it was a HIT!
Hey... the ovens still warm... how about some cookies for dessert... no recipe for these... dairy section cookie squares... ready to bake... YUM!

Christmas Trees on Tour...

I am HAPPY to be a part of Julia's... I don't have a home for you to tour... but I have a tour of Christmas items that will go into homes... sooooooo...
Let's tour some very special trees... These trees are part of an annual charity event called The Christmas Tree Brunch put on by a division of Assistance League... each tree is decorated by members of the organization... tickets are sold at the event by young members called Assisteens... people tour the trees and out tickets in the box for the trees they would like to win!Each tree is uniquely decorated with a theme! Not only do you win decorated trees, but FABULOUS presents under the trees... gift cards, cash, vacations and more!Are you feeling lucky... you can gamble on this tree..After everyone has had enough time to tour the trees... lunch is served...
This year's table favor...
A lovely chicken breast with rice in a cream sauce with asparagus followed a yummy salad of baby greens and an incredible dressing to die for (ooops... forgot to snap a photo)...Dessert for kids was a fruit tart... note the little confetti... they are Micky Mouse confetti (ooops... forgot to mention... this event was held at the Disneyland Hotel)...Adult dessert... chocolate mousse bombe...While eating and drinking and being MERRY... tickets are drawn and winners are announced and then you must take home your Christmas tree and all the treasures under it... here are some more of the trees... an upside down tree... the items under it or should I say on top of it were FAB... this was the tree I wanted to win... but alas I did not win anything... sigh...

Dirty Dancing in a PINK Dress...


Dirty Dancing is a 1987 romance film. Written by Eleanor Bergstein and directed by Emile Ardolino, the film features Jennifer Grey, Patrick Swayze, Cynthia Rhodes, and Jerry Orbach. The story details the moment of time that a teenaged girl crosses over into womanhood both physically and emotionally, through a relationship with a dance instructor during a family summer vacation. Around a third of the movie involves dancing scenes choreographed by Kenny Ortega , and the finale has been described as "the most goosebump-inducing dance scene in movie history". via Wikipedia**

Ever wonder why people love movies so much? I know I do. Perhaps it’s the happy endings or the impractical themes. Dirty Dancing has always been at the top of my list of movies to watch and in some odd way it reminds me of me and my life with my dearest husband.

What is your favorite scene?

The scene where Baby stood in front of Johnny with her arm up behind his head while he gently led his fingers down her arm. She got so tickled each time by that move and his irritation showed. It took many tries for her to nail that move on the dance floor.

What is your favorite outfit?

Her pretty pink dress - She’s positively gorgeous!

What is your favorite line?

"I'm scared of walking out of this room and never feeling the rest of my whole life the way I feel when I'm with you." – I know that line by heart.

I am Baby and my husband is Johnny. My husband and I met dancing and he truly swept me off my feet. Ever since we’ve been together he has never once put me in a corner.
