I use a combination of red and green salsa for my sauce... instead "enchilada sauce"...
Salsa sauce ready...
Mild cheddar cheese grated with sliced green onions and a little Lawry garlic salt and pepper...
Corn tortillas gently fried...
Son helps dip tortilla in the salsa sauce...
and place in the pyrex dish (note bandage... the finger accident... thank goodness it is still attached... kids!)... ok moving on...
Ooops... you can tell... I'm not a "foodie"... I forgot to show the layering process... tortillas... cheese, green onion, shredded chicken... tortillas... cheese, green onion, shredded chicken, tortillas and then topped with cheese alone...
Baked at 350 degrees for 20 minutes... and as you can see... it was a HIT!
Hey... the ovens still warm... how about some cookies for dessert... no recipe for these... dairy section cookie squares... ready to bake... YUM!
